today i am stuffed.


with the salad below. (euf, so full!)
with gratitude.
with love for friends new and old.
with undeserved kindness.
with peace.
and the knowledge and faith that life has a way of working out. (ps: remind me of this the next time i think the sky is falling, as invariably i will at some point in the near future.)



(note: ignore the strange look on my face. i think it's the product of nearly finishing the salad {yes, the ENTIRE thing}, which left me careening toward food comatose. and ignore my poor hair--that's a product of dying hair dryer.)

thanks for giving me my first cafe rio experience. and for the trip to wal-mart for a new hair dryer. my hair thanks you. let's play again soon.

dah I love caf rio. I'm so glad you could experience it. And I"m quite impressed you (almost) finished the salad. Little known fact: it's just as good the second day.

The size of the salad seems to fit within Texas standards. How was the taste and over palatableness of the dish? By the way, congrats on your efforts against the salad.

I was so happy when I clicked on your blog today and I saw you with that salad. Silly, I know, to be so happy because you are eating, no, experiencing a Cafe Rio Salad. But, I'm a bit of a foodie.
I know that it's summer, but you should give their Tortilla Soup a try, it is super good also.

Oh Cafe Rio, even though basically everytime I eat it I get sick and feel like I'm carrying around the world's biggest food baby in my stomach, I can't stop going there. So good.

mmm, cafe rio is delicious! Also, I almost always can finish my salad, but then when I realize that everyone has stopped eating and is watching me like I'm the world's biggest garbage disposal, I force myself to stop. And then I cry a little inside 'cause I want to keep eating :)

oh cafe rio is so good!! and you just do have to try the pork. you would never regret it!! also, i feel like we are friends now that you are in utah. despite the 3 hours between us!

i'm jealous you're enjoying cafe rio! i'm from st.george, (southern utah) where cafe rio started. it's been in my system for years! unfortunately they are no where to be found in WY boo.

it looks like you're having a great time!

I LOVE the cafe rio salad. I got one this weekend too! I always have them leave out that rice and tortilla and it makes it a little easier to dominate. :)
Don't forget to ask for a punch card so you can get your 10th salad free! :)
