what i'm eating.


cottage cheese on toast

all natural pb on toast

i am a firm believer that not only do our tastes change over time, but we have the power to actively change how we taste and enjoy food. 

the way in which to do this is simple: give up fake sugars. and cut out overly processed food. and if it the rest of your life is a slow process of learning how to do this? so be it. health is not a sprint.

1. toast with cottage cheese. simple, light, filling, and high in protein. need i say more?

2. strawberries. naked, raw, whatever you want to call it, have them just as they are. enjoy the warm weather and the fruits it has to offer.

3. "cheesy" kale chips. a few months ago, on a whim, i bought a dehydrator. now i've made some really foolish financial investments over the years, but i'm learning. this one has yet to prove itself as a sound investment, because to-date i've only really made these kale chips in it. so if anyone has some great recipes involving a dehydrator, please, send them my way! these chips consist of kale dressed in a sauce made of cashews, nutritional yeast, red bell pepper, a bit of lemon juice, agave, and green onions. they sit in the dehydrator for 12+ hours. i'm a snacker. that's my food profile in a nutshell. and since most snacks out there are not super healthy these kale chips are a great option for me. (though not totally realistic for most people, i get that).

4. chocolate covered pretzel. as well as enjoying snacks, i'm also realizing my sweet tooth is bigger than most. this little chocolate covered pretzel (asher's; dark chocolate variety) is the perfect size to really satisfy my cravings while still feeling like a big indulgence. it's only 110 calories and while i don't count calories i like to know it's a lot less than a snickers or some other traditional candy bar. 

5. peanut butter on toast. sweet, salty, protein-packed and filling. need i say more?

I have been eating avocados like they're going out of style. I don't even know if they're in season, they're just so, so good! I especially like them smashed on top of black bean burgers.

I absolutely love the eat vanilla yogurt with granola mixed in. It's a wonderful summer snack too, even breakfast.

what great healthy snack ideas! i've been making batches of kale chips every week, but never thought to flavor them with anything but salt & garlic powder - it's time to experiment :-)

I have this thing where I like to have a sweet snack and then a salty snack and then a sweet snack .... to infinity. Chocolate Covered pretzles are MADE for me!

I haven't gone to your actual blog (though of course I subscribe on Google Reader!) in awhile, but it is looking gorgeous! Love the header.

Your food looks amazing. Today I had a spinach salad with just a scatter of olive oil and vinegar with a side of pineapple. My first healthful meal in days! I really like what you say about healthy eating that isn't a sprint. I sometimes feel that food habits have to change overnight, but I like the thought about being more forgiving towards oneself. Thanks for the reminder!

I always have couscous, spinach (fresh or frozen), and mushrooms on hand. Easy to whip up a healthy, delicious, filling meal in 10 minutes. Perfecto.

Im a huge strawberry lover. I love them cold, and with the tops cut off..thats my only requirement...and then i go crazy and eat like 5...or 10..

Ooo, also im in love with Terra Exotic Vegetable Chips. They look like potpurri, and I believe i bought them at ALDI.. Not sure if you have one of those.. They are delicious & im a snacker too. Its much better than snacking on nasty potato chips.

Use your dehydrator to dry out apples - just dip in fresh lemon juice first - these are a great snack, but the lemon is a real kick. Also dry out all your fresh herbs, cherry or small roma to,matoes are unreal - dry them out and then put them in beautiful olive oil, crushed garlic and herbs, you will never buy dried or semi dried tomatos again once you have made them yourself! eat with crackers and cheese or toss through pasta.

oh my, i love kale. my eight year old self wants to scream at me, but i soooo love kale. more than i loved dunkaroos. and that says a lot. i've really been loving watermelon at all hours of the day. and avocados. oh yes. avocados are like mother nature's butter. yum.

One thing I've totally been eating a lot of lately (like, almost every day) are green smoothies. Basically they're spinach, blueberries, bananas, soy milk, and orange juice. So healthy for you and totally yummy and filling!

Here are some ideas to put your dehydrator in good use :

- zucchini chips : 10 min in water and cider vinegar, olive oil, salt, pepper. 4 to 8 hours in the dehydrator

- mango, apple, pear chips : peal, slice. 8 to 12 hours in dehydrator

- nut crackers : hemp, cashew, sunflower, any herb you like, salt, pepper. Grind and mix together. Add some water until it turn to a bread dough. Flat it with a rolling pin or a bottle. At this point, you can shape tiny funny flat forms. Put 10h in the dehydrator. Put any kind of awesome dip (guacamole, raw hummus, tzazitki, mango salsa, cottage cheese...) on it. Yum.

I have plenty of those :) I'm a bit like you as I am struggling to get out of my NED by eating healthier. Reading about it on your blog was so refreshing and enlightning. no one is that honest in PAris. Thank you ! You are awesome !!
