introducing...the potato.

about, oh, maybe a year ago i had this revelation: a potato is a vegetable! huzzah!

so when i began to introduce more fruits and vegetables into my diet the potato was this miracle.

to cook i clean the potato, poke holes all over (with a fork), coat in a tiny bit of butter and salt, and place in the oven at 450 degrees for an hour.

from there that potato becomes the proverbial oyster...you can put anything in it! i always go with greek yogurt (which in this context tastes like sour cream), kerrygold cheddar, and scallions.

when i'm looking to mix things up i'll add in refried beans, mushrooms, or avocado.

it's cheap, simple, and packed full of protein.

You should give yams a try. Most people say "sweet potato", but it's usually really a golden yam that they are eating. They are super good. I think that they are like the "whole wheat" version of a potato because they are lower on the glycemic index.

oh my gosh i love baked potatoes. i need to buy them more. and eat it with chili.

btw. trader joes has excellent black bean refried beans with a hint of jalapeno. really yummy.

Nothing like a good baked potato (heck, or sweet potato - love those, too!). I just discovered Fage myself a few months back and also use it as a sour cream sub - heavenly.

Now I know exactly what's going along with my dinner tonight. YUMS!

Yum. That's a great idea to use Greek yogurt as sour cream, I'll definitely start doing that!

It's funny that you said you had the revelation that a potato is a veggie, because I had that revelation a few weeks ago. I REALLY wanted some fries and finally put it together that I could make some heathy-ish fries from home. Man, were they good.

Yummy!!! J'adore potatoes! If you make mashed potatoes, I would add a celery root (mashed as well) with a little bit of brummel and brown (yogurt-based butter that is better for you) and you will be in heaven!!

Mmmm... taters. Nothing like those lovely rounds of fluff with butter and sometimes when I want something just a little special, just a teensy bit of bacon on top. THAT is the epitomy of nummyness. =)

You probably already know this, but you can make a "baked" potato in the microwave in about 1/10th the time. Poke the your holes and throw it in for about 4 minutes (rotating half-way through). You don't get the crispy skin, but it's fast and still really delicious with cheese and sour cream!

My life changed for the better when I learnt that you can reduce the cooking time of a baked potato by 30 minutes... All you have to do is bake it with a metal skewer poked through the middle x
